MILAN – Raul Rodas, from Guatemala is the newly crowned 2012 World Barista Champion. He came out on top of the Wbc in Vienna Friday, besting his closest rivals Fabrizio Sensión Ramírez of Mexico who placed second, and Colin Harmon from Ireland who came out in third spot.
He is the second competitor from a coffee-producing country to win the WBC after Salvadorian Alejandro Mendez’s triumph in last year’s edition. “I feel very happy. These were ten months of hard work and the other competitors were all very good” said Raul Rodas, in a telephone interview to Free Press.
The Guatemalan barista had already participated in the WBC in 2010, earning second place. Ricardo Villanueva, President of Anacafe, stated he was very happy with the result obtained by Rodas. “Not only we have the best coffee in the world, but also the best barista,” he said.
According to sprudge.com, Rodas competed with pulp natural processed coffee from Finca Soledad, in the Acatenango region; experimentally dry fermented for 14 hours, then dried for 15 days on raised African-style processing beds. His routine was immensely complex, including a signature drink that featured four ingredients: infusions of fresh cascara (coffee cherry) and an infusion of unroasted coffee beans covered in mucilage, and Clever Dripper brews of both partially roasted “yellow bean” coffee as well as first crack coffee.
After tasting all four components, two judges were asked to add a small amount of the cascara and mucilage infusions to simulate a natural profile in his semi-washed espresso (pulled with 17 grams of coffee) and the other two were asked to add cascara and first crack ingredients to their semi-washed espresso (pulled with 18 grams of coffee) to simulate a “washed profile”. He then asked the judges to swap their drinks with their neighbours, so that all judges had an opportunity to taste (and score) the different mixtures.

The 2013 World Barista Championships and World Brewers Cup will take place in Melbourne, Australia. The events will be hosted by the Melbourne International Coffee Expo (MICE)at the end of May 2013 at the Royal Melbourne Showgrounds.
